What Is Crisps?

A potato chip or crisp is a thin slice of potato that has been either deep fried, baked, or air fried until crunchy. They are commonly served as a snack, side dish, or appetizer.

There are four main steps of potato chips producing line.

Preparation. Potatoes are destoned and washed in the destoner.

Slice washing. After slicing, the starch on the surface of the slices needs to be washed away.

Blanching.

Multi-zone frying.

Large Potatoes, washed and cut into chips.

Place pan on medium heat.

Fry the potato chips till slightly brown and cooked through.

Reduce the oil to about a tablespoon.

Add salt, sugar and soy sauce and mix well.

Add two more tablespoons of oil into the pan and let it heat up.

Next pour in the whisked eggs.

Which Potatoes Are Best For Crisps In Uganda?

The best potatoes to use for homemade chips are Russets or another starchy potato-like Idahos or Sweet Potatoes. These potatoes are high in starch and low in moisture. Plus, they crisp up and change color when fried to that nice brown color that you want in a crispy potato chip!

How Do You Pan Fry Chips In A Deep Fryer In Uganda?

Points to remember

Cut chips to equal width.

Heat oil to 130C and fry the chips for 7-8 mins or until cooked through but uncoloured. Drain and leave to cool (preferably in the fridge overnight).

Heat oil to 180C and fry the chips until golden and crispy. Drain and serve.

Do You Boil Chips Before Frying In Uganda?

Parboil the chips in boiling salted water for 8 to 10 minutes, or until soft but keeping their shape. Drain in a colander and leave to steam until completely dry this is very important before frying. Heat a deep-fryer to 180°C or fill a deep saucepan to three-quarters full with vegetable oil over a high heat.

How Long Soak Chips Before Frying In Uganda?

Place them in a large bowl and cover with cold water, then allow them to soak for two or three hours. (You can also stick them in the fridge and let them soak for several hours or overnight.) When you’re ready to make the fries, drain off the water and lay them on two baking sheet lined with paper towels.

Pour the oil (1L (4 cups) vegetable oil, or extra-light olive oil, for frying) into a 3-litre (12-cup), 18cm (base measurement) 10cm deep, medium heavy-based saucepan (the saucepan should be no more than one-third to half full). Place a thermometer into the oil and heat over medium-high heat to 160°C.

How Long Do Chips Take To Fry In Uganda?

As a rule of thumb, you should fry your chips until they turn a pale golden colour. How long is this exactly? Well, it’s usually between five to ten minutes in a deep fat fryer. If you want them to be extra crispy, though, a double-fry is in order – which requires an extra five minutes.
